Where do we get our eggs?

Here at the Tiny Texas Ranch, we take our eating serious and one of our favorite foods is pasture raised, farm fresh eggs.  Not those white eggs with the pale yellow centers you find at the grocery.  We like dark eggs, the darker the better. 

The French also take their eggs serious because the French use eggs in so many of their great dishes and pastries.  When you are a French chef, not any egg will do.  It must be an egg from a French hen, raised on fresh greens.  In our quest for the perfect egg, we discovered the beautiful French Black Copper Maran which lays the darkest egg of any breed of chicken in existence.  This breed has only recently been imported into the country and still very hard to find.  We had eggs shipped in from all over the US so we could hatch our own flock of dark egg layers for your enjoyment.

In addition to the French hens, we also have our old time favorite, the Barred Rock.  This hen also lays a brown egg of much substance.  After all, I don't want to eat a tiny egg and I doubt you do either. 

How do we house our chickens?

We only confine our chickens at night for their protection.  During the day, our hens spend their day scratching in the pasture where they eat all the green grass and bugs they desire.  The green grass is what makes the egg yolk so orange.  Just as carotene (full of vitamin A and other nutrients) makes a carrot orange, it also adds the color to the yolk of an egg and is your assurance you are getting a much healthier egg.  Eggs are one of the best and most complete foods you can eat.  Pasture raised eggs have been proven in scientific testing to have less cholesterol and more vitamins and antioxidants.

How old are our eggs when you get them?

Unlike grocery store eggs that can be weeks old by the time you get them, our eggs are gathered daily and go straight to you.  Actually, many of our grandmothers didn't put their eggs in the refrigerator since they ate them so fast.  If you love fried eggs, and honestly who doesn't, they fry much better when the eggs are at room temperature.  Go ahead, get a cute basket or bowl and display your lovely brown eggs on your kitchen counter top.
